Sesame Tahini Buddha Bowl (Vegan, Gluten Free)

This week, I tried my hand at making my own version of Buddha bowl. I'm not sure who named these types of bowls after Buddha, but I'm into it. The easy recipe is below! Hope you enjoy it as much as I have been lately.  

Sesame Tahini Buddha Bowl 

A vegan + vegetarian dish that is satisfying and simple! 

Serves: 1 | Time: 20 minutes

Ingredients 

For the bowl: 

1 cup washed and chopped kale

1/2 cup kidney beans

1/3 cup cooked quinoa

1 tablespoon sunflower seeds

1/4 cup tablespoons roasted chickpeas*

For the sesame tahini dressing

3/4 tablespoon sesame oil

1 tablespoon dijon mustard

1 tablespoon tahini (sesame seed butter)

Process 

Combine all salad ingredients together in a large bowl

In a small bowl, mix all dressing ingredients together until smooth and fully combined

Top salad with dressing and eat!
