Post-Workout Granola Bowl (GF, Vegan)

I always come home from my morning walk or yoga class so ready to eat, which is why this granola bowl has been perfect for those days where I can't fathom waiting for oats to cook on the stove. Packed with plant-based protein and good carbohydrates, this bowl fills me up & keeps me satisfied until lunchtime. Hope you enjoy! 

Post-workout granola bowl (vegan, GF)

Ingredients

1/2 cup granola of choice -- my favorite is Purely Elizabeth, or KIND Maple Quinoa

3/4 cup almond milk

1/2 - 1 cup fruit of choice (I love raspberries) 

1 scoop plant-based protein (this is the best vanilla I've tried

Directions

In a microwave-safe bowl, mix together almond milk, granola, and protein 

Microwave for 1 minute (try not to microwave it for too much longer; I put mine in for two minutes yesterday, and the almond milk exploded right out of the bowl. Not great!)

Remove from microwave, top with fruit and extra granola, and eat up
