Chocolate-Covered Cookie Dough Bites (Vegan, GF)

These happened on a whim. It was 8PM on a Thursday, and I wanted a cookie. However, our oven does this FUN thing once a month or so, where it makes a burning smell every time we turn it on. Don't worry, don't worry -- I have our maintenance department on speed dial and always call to get help in solving the issue. Because anything involving the oven was out, I opted for a raw dessert with some simple ingredients that I had on hand. These turned out fudgy and flavorful; they've got the perfect level of sweetness. 

PSA: happiest of birthdays to my mama! She's my best friend and my biggest supporter. I am so grateful for her -- I could not do this life without her enthusiasm and love. 

Chocolate-Covered Cookie Dough Bites (V, GF) 

Serves: 6

A raw, no-bake, and simple dessert. Vegan, gluten-free, and grain-free. You can make these in your college dorm room, too!

Ingredients

  • 2 tablespoons coconut flour

  • 2 tablespoons maple syrup

  • 3-4 tablespoons cashew butter (any nut/peanut butter will work great)

  • 1 teaspoon of water

  • 1 teaspoon sea salt

  • 1 teaspoon vanilla extract

  • 1/2 cup of chocolate chips (I love the Enjoy Life brand)

Process

  • Mix all ingredients (EXCEPT the chocolate chips) in a small bowl

  • Mold into small, truffle-sized balls

  • Store in the fridge for at least one hour, but preferably overnight**

  • When ready to serve & eat, melt chocolate chips in the microwave or on the stove top

  • Drizzle the balls with all of the chocolate

  • Sprinkle a little extra sea salt on top

  • Serve and enjoy!

Notes

  • **I waited until the next day to serve them (after a night of keeping them in the fridge), and they were the PERFECT fudgy consistency
