Apple & Almond Butter Overnight Oats (Vegan, GF)

Apple & almond (or peanut) butter seems to be the best combination to ever have been invented, which I'm very grateful for. The addition of oats to this bowl makes for such a delightful, filling breakfast that keeps me full all day... just kidding. In a few hours I'll be ready to have lunch, but it does do a good job of fueling me for the morning. I always look forward to breakfast when I know I've prepared a bowl of oats the night before! 

Apple & Almond Butter Overnight Oats (Vegan, GF)

The classic combination of apple and nut butter is easily turned into overnight OATS that are vegan, gluten-free, and soy-free.

Serves: 1 | Time: 5 minutes (+ overnight) 

Ingredients

1/2 cup old-fashioned rolled oats
3/4 cup unsweetened vanilla almond milk
1 1/2 tablespoons nut/peanut butter
1 tablespoon chia seeds
1/2 - 1 teaspoon cinnamon
1 apple, washed & diced

Process

  • Mix together all ingredients in an 8-ounce mason jar, or a tupperware (one that seals super well!)

  • Store in fridge overnight

  • Enjoy in the morning
