Sweet Potato Holiday Hash
This is a hash that I've made for the past three years at our Christmases and Thanksgivings. It's always such a success with family members (there are barely any leftovers), which sometimes surprises me because this dish is one of the easiest to cook. It simply involves throwing a bunch of ingredients in a bowl and baking it in the oven. I can't wait to make it this year!
Sweet Potato Holiday Hash
Serves: 6 | Time: 1 hour and 15 minutes
Ingredients
For the hash:
2 large sweet potatoes, diced (skin can stay on)**
1 apple, washed & diced
1/2 cup diced yellow onion
1 tablespoon maple syrup
2 tablespoons olive, avocado, or coconut oil
1/2 cup dried cranberries
For the seasoning mix:
1 fresh rosemary stalk
1 teaspoon ground cinnamon
1 teaspoon sea salt
1/2 teaspoon black pepper
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
Process
Preheat oven to 400 F
Spray a large baking dish with cooking spray (coconut/olive/avocado oil is preferred)
Once the apple and sweet potato have been washed and diced, mix together all ingredients in a bowl
Add in the Seasoning Mix and stir well
Pour into a baking dish, and bake for 60 minutes
Remove from oven, serve, & enjoy!
Notes
**Last year, I found these AMAZING pre-diced sweet potatoes at Trader Joe’s in the produce section. I would recommend those for this recipe (because they make life even easier), but if you can’t find them, regular sweet potatoes are great.
